There are cracks in the floor tiles in front of the 3-compartment sink.

The owner didn't wash his hands properly, he touched the handles of the faucets with his hands. There are proper handwashing signs up at both hand sinks. You need to have a training for everyone going over the correct order of hand washing: dispensing the paper towel, wet hands, soap hands, scrub, rinse, dry off hands with paper towel, then turn off faucet using the paper towel. I need verification that everyone knows how to properly wash their hands by 4-17-15.
There is paint coming off the large stand mixer. Discussed sanding it so that the paint won't chip into food.
Found several wiping cloths stored on counters. Ensure cloths are stored in sanitizer between use.
Found build-up on can opener blade.
The facility's employees have not gotten their food handler's licenses yet. I will email the schedule of classes at TCHD as well as the link to the approved online classes.

Found all containers in prep cooler to be without labels. Ensure foods are properly labeled and that ready to eat foods are following the 7 day rule. Per owner, labels will be on food items by the end of the day. I will check for compliance by 12/12/14.
Retraining was done on site. Retrain all staff on proper handwashing procedures by 12/22/14 and submit training documentation to TCHD.

Found no hand towels in bathroom paper towel dispenser or in the make line towel dispenser. Ensure each handwashing sink is equipped with soap and paper towels. Towel dispensers were refilled at the time of this inspection.

Found scoops stored with the handles down in the food on the pizza make table. Scoops were removed and replaced with the handles up.
Observed employee wiping his hands on his clothes while prepping pizza crusts and not washing his hands. Employee was re-trained on site. Conduct a personal hygiene and hand washing training with all staff and submit to TCHD by 9/12/14.
Found 0 ppm chlorine sanitizer in the wiping pail and 3-compartment sink. Maintain chlorine sanitizer in 3-compartment sink at 50-100 ppm and in the wiping pail at 100-200 ppm. Corrected to 100 ppm.
Microwave interior and pizza oven had a build up of food debris. Wash, rinse, and sanitize it.
