  • Observed kitchen staff working/handling food in the kitchen without proper hair restraints. Wear effective hair restraints.
  • Observed some (food) debris in the True refrigerator and the True freezer. Clean. Observed build-up of debris on dish washing racks. Clean.
  • Observed some debris in the top drawer of the cabinet by the kitchen entrance. Sandwich wraps were stored in the drawer. Clean drawer.

  • Under the prep table on the bottom shelf there is some sort of cover that is coming off. This makes the shelf not easily cleanable as well as another place for pests to hide. I pointed this out to the kitchen manager.
  • In the storage room by the restroom there is coving that appears to be missing and some that is coming away from the wall leaving a gap. This is the perfect place for pests to hide. I pointed this out to the kitchen manager.

  • In the kitchen there are 2 wheeled carts, one by the 2-compartment sink and another by the 3-compartment sink that have chemicals stored on them. They are on wood that doesn't appear to be sealed. Also the shelf under a prep table the coating is coming off. I pointed this out to the kitchen manager.
