  • Observed unlabeled sliced tomatoes in the bottom of the sandwich prep cooler. They must be date labeled and used within 7 days. Manager believes they were cut yesterday. She discarded them.

  • The following areas had a build up of debris: kitchen shelves, inside of utensil drawers, dough mixer, insides of lobby cabinets. Wash, rinse, and sanitize these areas.
  • The pizza oven, sandwich oven, and hot case had a build up of debris . Wash, rinse, and sanitize them.
  • The outsides of the kitchen cabinets, cooler door handles, cabinet handles, and the small sink next to the pizza prep cooler had a build up of debris. Wash, rinse, and sanitize these areas.
  • There is a small leak in the water line to the ice machine. Repair or replace it.
  • The kitchen hand sink by the 3-compartment sink had a bucket inside it. Hand sinks are for hand washing only.
  • The floors in the walk in freezers had a build up of debris. Clean the floors.

  • Observed several clear plastic containers stored in the kitchen near the donut prep counter not labeled with the contents. Label containers.
  • Observed broken door seal gaskets to the reach in doors where milk, eggs and cold sandwiches are stored in the walk-in cooler. Replace gaskets.
  • Observed sanitizer cloths stored on prep counters. Cloths must be stored in santizer buckets between uses.
  • Observed handles to reach in coolers, microwave and bread oven. Observed food debris in kitchen utensil drawers. Wash, rinse and sanitize.
  • Observed a box of cups in the back room stored on the floor. Place six inches off floor.
  • Observed coat stored on large mixing unit and two purses stored on prep counter. Store in appropriate area.
  • Observed chemical spray bottle stored next to other cleaning chemicals not properly labeled. Manager discarded bottle. Make sure to label chemical bottles.
