- Observed the shelf covering beginning to peel on the front of the shelving in the cabinets throughout the kitchen. Repaint, reseal, or replace to allow for proper cleaning.
- Observed large amount of ice build up on bottom of standing freezer that has made the bottom shelf unusable and observed rust beginning to form on multiple spots on the same shelf. Defrost fridge and repair shelf to allow for proper cleaning.
- Observed linen towels underneath drying cups, plates, and other equipment. Drain boards must be self-draining to allow for water to drain away from clean dishes. Wet towels on food contact surfaces, such as the counter, present a risk for contamination. Remove towels and allow for water to drain onto a non-absorbent material.
- Observed a pan stored on the floor in between a movable cabinet and the wall near the oven. All cleaned and sanitized equipment must be stored in a way that protects from contamination and 6

- Observed thermometers in ice bath at 38 F and 40 F. Thermometers should read 32 in ice bath.
- Observed chlorine sanitizer in kitchen bucket at 0 ppm. Chlorine sanitizer in a bucket or spray bottle should be maintained at 100-200 ppm. The concentration was corrected at the time of this inspection.

- Observed exposed wood on the cabinet edges and cracks on the corners of the counter. Seal exposed wood and repair counter. The seal on the reach in refrigerator in the kitchen is cracked. Replace seal.
- Observed food debris inside the microwave. Wash, rinse, and sanitize inside of microwave on a routine basis throughout the day.
- All non-food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. These surfaces include but are not limited to the drawer and cabinet faces.
- Seal along 3-compartment sink is chipping away. There is a gap between the back of the sink and the wall. Seal all gaps and reseal sink.

- Cracked door seal on Refrigerator 1. Repair.
- The sanitizer in the 3-compartment sink was ~200ppm. Manager added more water to the sanitizer until it was 100ppm.
- Build up on the door seal in the stand up freezer in the back. Clean the seals.
- Mop was stored in the water in the mop bucket. Store mop so that it can air dry. The mop can be stored in the grated part of the mop bucket as well.
