  • Establishment will need to make sure and keep proper documentation showing that employees contacting ready-to-eat foods with bare hands utilize two or more control measures to provide addtional safeguards to hazards associated with bare hand contact(observed employee cutting up cateloupe with bare hands and no documentation was maintained at facility); documentation given to establishment to comply for next inspection. 229.164 (e) (1) (D) (ii)Bare hand documentation.
  • There was a presence of gnats around apples/bananas; will need to use approved pest control measures to treat problem.
  • Will need to replace thermometers within ice cream display case; thermometers not working accurately. 229.165 (l) (1) (B)not calibrated.
  • Do not store in-use kitchenware within a container of standing water; if going to do this, keep within the dipper well or water will need to be maintained at 135 degrees F.
