Employees must follow proper handwashing procedure in between tasks by washing with soap and hot water for 20 seconds and dry with paper towel.

MORNING CREW WERE LEFT WITH HAVING TO CLEAN AND REFILL ALL FOOD STATIONS THAT WERE LEFT IN A DISFUNCTIONAL AND DIRTY CONDITION BY PREVIOUS NIGHT'S STAFF.

INSPECTOR FOUND SEVERAL FOOD ITEMS WHOSE CONDITIONS WERE IN GROSS CONTAMINATION AND POSING A DANGER AND NOT FIT FOR HUMAN CONSUMPTION. 1) BREAD ROLLS IN ORIGINAL PACKAGE SITTING IN PLASTIC BREAD CRATE WITH GREEN MOLD GROWING INSIDE. UNIT HAD BEEN LEFT IN DIRECT CONTACT WITH UNSANITARY FOOD CONTACT SHELVING AREA. 2) FRESH STRAWBERRIES AND OTHER FRUITS, PREPACKAGED, HAD BEEN LEFT TO THAW IN WALK IN COOLER OVERNIGHT. HOWEVER, ITEMS WERE LEFT ON FLOOR. THE FLOOR OF WALK IN COOLER IS NOT A SANITARY ENVIRONMENT AND IS FOUND WITH POOLED WATER. ALL SAID CONTENTS WERE DISPOSED OF IMMEDIATELY.

OPENED CONTAINERS OF DESERT CONDIMENTS EXPOSED TO UNSANITARY ENVIRONMENTAL CONTIDITONS INSIDE WALK IN COOLER, INCLUDING HAVING OTHER CONTAINERS PLACE ON TOP OF AND IN DIRECT CONTACT WITH SAID DESERT CONDIMENTS.

ALL AREAS OF DESERT MIXING UNITS WERE FOUND WITH ACCUMULATIONS OF DRIED FOOD AND ICE CREAM.
