Cooling methods include; placing food in ice bath container, contstant stirring until temperature is brought to 70 degrees F. Food is then placed in cooler where temperature should drop to 41 degrees F or below within 4 hours.
  • Observed 3 stainless steel containers stacked directly on top of each other. Containers of meat did not have a proper cover. Container of caldo in refrigerator next to ice machine did not have a cover. Ensure all product stored in containers, has a proper cover at all times.

  • Observed bucket of peeled potatoes in water stored in middle sink of three compartment sink. Discontinue to use three compartment sink for purposes other than ware washing.
  • Observed large dead roach on floor in front of reach in cooler. Observed roach eggs behind ice machine. Ensure all evidence is eliminated. Ensure establishment is treated for pests on a routine/as needed basis. All invoices are required.

  • Bulk, ready-to-eat food in refrigerator that is in dry storage room, is not labeled with a use by date. Ensure all ready to eat food is marked with a use by date. Use by date shall not exceed 7 days from preparation day.
  • Trays containing raw meat and raw chicken in cold hold unit are stored together. Pieces of raw meat are touching pieces of raw chicken. Ensure lids are used to coveer trays, or ensure trays are not over filled to where raw products touch.

  • Refrigerator in the back storage room was at 45 degrees F. Ensure the refirgerator is at 41 degrees F or below when storing potentially hazardous foods.
  • 229.168 (b) working container not labeled. Observed spray bottle under the 3 compartment sink without a label identifying chemical. Ensure all containers used for chemicals are labeled with the chemical name. Corrected on site
  • Container of cloths did not have sanitizing solution in it. Ensure containers being used for cloths has sanitizer, such as bleach, in it. A bleach solution should be between 50-100ppm and sanitizing test strips should be used to test solution.

Ensure all employees who are going to handle ready to eat food with barehands are trained on procedures and the corrective actions and sign the acknowledgement form.
  • In the fridge in the back storage room, observed raw animal products stored in the incorrect order. Raw shelled eggs were stored below raw chicken and raw beef and raw chicken and raw beef were stored on the same shelf. When storing raw animal products in the same area, ensure raw animal products are stored according to cooking temperatures in descending order (raw shelled eggs and fish on top, raw beef, raw poultry on bottom)
  • Observed a spray bottle with the chemicals under the 3 compartment sink without a label. Ensure all containers for chemicals are labeled with contents.
