- Rice that was stored from previous day was at 52 degrees F. Rice was discarded. Ensure to follow the following procedure to ensure food is cooled properly: After food is cooked and removed from stove, food has 2 hours maximum to be reduced in temperature to 70 degrees F. Food then has an additional maximum of 4 hours to reduced temperature to 41 degrees and below. It is recommended to divide foods into smaller portions, use ice baths, continuously monitor temperature and stir foods to ensure the above temperatures are reached in the time allotted.
- Observed raw chicken, diced onions/tomatoes/shredded cheese/cut bell peppers being stored on prep table. Temperatures were not at proper cold hold temperatures of 41 degrees and below. Issue was corrected and food was placed on ice immediately.
- Hand sink was not supplied with hand soap and paper towels. Issue was corrected on site. Please ensure that hand sinks are supplied with soap and paper towels at all times.
- Certified Food Manager was not present at time of inspection. Certified Food Manager should be present at establishment during all hours of operation. Ensure that all Certified Food Manager certifications are registered with the city. To do so, take certificates down to 1901 S. Alamo, Monday through Friday between 7:45am and 4:30pm to have certificates registered for a fee of $15.45.
- Ensure refrigeration units storing potentially hazardous foods (i.e. raw meats/chicken, cut produce, cooked and prepared foods being stored, etc) are supplied with thermometers.
- Ice machine panel appeared to have pink/black slime. Ensure that panel is cleaned as frequently as necessary with sanitizer (i.e. bleached water reading at 50-100ppm)
- Please post this inspection report in public view. Food permit was not in public view. Please post current and valid food permit. If permit has not been renewed please contact Health Department at 210-207-8853 OR 210-207-0135 to renew license and/or obtain a copy of license to post.
