  • 229.166 (i) (1) (B) HWS improper use. Observed Food Handler, cleaning knives inside of HWS. Instruct staff that HWS's are only for staff to wash hands, and nothing else.
  • 229.165 (d) (1) (B)free of breaks, cracks. Insure once utensils break or become damaged, that they are no longer used. Observed knife with a broken blade, in work room area.
  • Ch 13, Art II, section 13-26 Display permit. Insure inspection report is always posted for customer view. Report was behind several large picture frames, blocking it from view by customers.

  • 229.168 (c) (1) toxics stored. Do not store or place cleaning products above, or have spray nozzle pointing at dishes and utensils. Chemicals can easily spill and contaminate these food contact surfaces. Spray cleaner was pointing at dishes, and nozzle was directly over kitchen utensils.
  • 229.165 (m) (1) (A)not clean. Clean inside of microwaves, and meat slicer, after use. Plus, insure that broken utensils are disposed of, as needed. Broken knives seen in meat cutting room.

SERVICE MECHANICAL DISHWASHER SO THAT TEMPERATURES REACH AT LEAST 160F (WASH CYCLE) AND 180F (FINAL RINSE CYCLE). ALSO HAVE GAUGES CLEARLY VISIBLE AND CALIBRATED TO REFLECT THE PROPER DISHWASHER TEMPERATURES. MAY USE THE THREE COMPARTMENT SINK SET-UP AS THE FINAL SANITIZING STEP TEMPORARILY WHILE REPAIRS ARE COMPLETED. QT-40 CONCENTRATIONS IN THE SANITIZING BASINS TO BE WITHIN MANUFACTURERS PARAMETERS.
