- Observed several droppings in the walk in cooler being used for storage. All surfaces and pans contaminated by droppings need to be cleaned and sanitized.
- Cabinets under prep tables had food debris along the bottom. All cabinets need to be cleaned and sanitzied.
- Observed single use foil cake pans being reused. Single use items may only be used once.
- Observed several pans in the walk in cooler and equipment with built up food debris. All items must be properly washed and sanitized before being stored to prevent insect infestation.
- Establishment did not have current routine inspection posted. Food permit was expired as well. Establishment must purchase food permit within the next 10 days at 1901 S. Alamo.

- Establishment has 2 refrigerators with employee foods and establishment foods mixed in both units. One refrigerator needs to be designated for establishment foods and the other needs to be used only for employee food and drinks.
- Hand sink by 3 compartment sink did not have soap at time of inspection. Ensure that each hand sink is supplied with soap and paper towels at all times for proper hand washing.
- Observed a few roaches, live and dead. Recommend having a credible pest control company and setting out additional glue traps. Evidence of insects needs to be minimized by any effective means.
- Observed food build up and debris inside and outside of the pull-out storage cabinets, and drawers on both middle islands. Cabinets and drawers need to be scrubbed and cleaned.
- Large mixer had food build up on the outside of it and flat beater had residue from previous batches of mixes still stuck on it. Ensure that the beater/whisk/hook are always cleaned before reusing them. Outside of mixer needs to be cleaned as well.
- Refrigerators did not have thermometers in them. A thermometer must be put into refrigerator to ensure a temperature of 41F is being maintained.

- Observed food items in refrigerator at 51 F degrees. All potentially hazardous food items must be kept at 41 F degrees or below.
- Observed a cigarette butt inside near food storage as well as cigarette ashes on top of icing buckets. Ensure all cigarettes are kept away from food area and are only smoked outside the food establishment.
- All refigerators and cold holding units must have a thermometer inside to ensure the proper temperature of 41 F degrees or below is being held.
- Observed various stacks of trays with grease/lard residue and food debris left on them. Ensure that they are all properly cleaned and sanitized before next use. Refrigerator needs to have mold removed from inside and around the door. The insides of cabinets where flour and sugar are kept need to be cleaned of any debris.

A food establishment shall employ at least one person assigned to each shift of twelve (12) or fewer hours who: (1) Meets the "person in charge" definition found in the Texas Food Establishment Rules; and (2) Has a valid and current food manager's certificate issued by the director. Manager must show proof of Food Manager Certification. Once a valid Food Manager's certification is obtained, proceed to 1901 S. Alamo (DBSC) Health Department desk to purchase ($15.45) a Metro Health ID.
