- Ensure frozen fish that will be served raw have been properly frozen to ensure parasite destruction. Provide for purchase specifications. Labeling/Documentation should accompany the product to advise as to whether the product was frozen properly. If the fish are frozen by a supplier, a written agreement or statement from the supplier stipulating that the fish supplied are frozen to the proper temperature and for the approved time is acceptable.
- Ensure cross contamination will not occur. Raw shell eggs found stored above ready-to-eat foods in the walk-in cooler.
- Establishment found using time only as a public health control for raw shell eggs and sushi rice. Raw shell eggs and rice found at room temperature.
