Also make sure to annotate a use by/discard by date for these refrigerated, prepared, potentially hazardous foods when keeping longer than 24 hours. 229.164 (o) (7) (A) consume by date (prepared).
  • There was some rodent droppings observed within facility(dry storage area, between shelf and large ice machine, and in back area adjacent from large dry storager room); will need to make sure and intensify efforts to minimize the presence of these pests. 229.167(p)(11)(C)rodents.
  • 229.168 (d) (2) (A) (ii) not according to label; Make sure to remove all raid insecticide products from establishment that are not commercialized/food establishment approved(product seen was for indoor residential use only). Also make sure to store chemicals in their designated area and not near equipment/cutting board.

  • Ensure frozen fish that will be served raw have been properly frozen to ensure parasite destruction. Provide for purchase specifications. Labeling/Documentation should accompany the product to advise as to whether the product was frozen properly. If the fish are frozen by a supplier, a written agreement or statement from the supplier stipulating that the fish supplied are frozen to the proper temperature and for the approved time is acceptable.
  • Ensure cross contamination will not occur. Raw shell eggs found stored above ready-to-eat foods in the walk-in cooler.
  • Establishment found using time only as a public health control for raw shell eggs and sushi rice. Raw shell eggs and rice found at room temperature. When time only, rather than time in conjunction with temperature, is used as the public health control the food shall be MARKED to indicate; the time that is FOUR HOURS past the point in time when the food is removed from temperature control;written procedures shall be maintained in the food establishment and made available to the regulatory authority upon request.
  • Ensure all coolers/freezers are equipped with thermometers. Walk-in cooler, reach-in cooler, walk-in freezer found without thermometers.
