  • Raw bacon found in lower shelf in Cold Hold unit that was at 90 degrees F. Food voluntarily thrown out.
  • Tomatoes not covered in walk-in cooler. Ensure all foods are adequately covered to avoid contamination.
  • Raw shelled eggs found stored on shelf next to clean plates. Ensure raw products are stored below and away products that are ready to eat and food contact surfaces. Only exception is if food contact surface is used with one single raw product and is sanitized at least once every 4 hours.
  • Cold hold unit shelving found at about 48 degrees. Ensure cold hold unit is checked by licensed professional and adjusted appropriately. Equipment will be checked during follow up inspection.
  • Knives found stored under front serving counter between underside of counter and attached wooden block. Utensils are being contaminated from both sides. Ensure all utensils are routinely washed, rinsed, sanitized, and stored appropriately to avoid contamination.
