- Observed employee battering chicken with bare hands. Provide documentation that handling of ready-to-eat foods with bare hands is accomplished using two or more of the following safeguards: double hand washing, nail brushes, a hand sanitizer, incentive programs for sick employees not o work, or control measures approved by the regulatory authority.
- Observed that one of the hand washing sinks was not stocked with paper towels. Provide for all hand washing sinks to have soap and paper towels.
- Observed employee improperly wash food containers and utensils. Employee rinsed item with water and then placed them in a sanitizing soulution. Provide for all soiled containers and utensils to be washed with soap and hot water, rinsed with hot water, and then placed in a sanitizing solution.
- Observed that there was an inadequate air gap between drain pipe of ice machine and floor drain. Provide for this air gap to be at least twice the diameter of the drain pipe.
- Observed the scoop inside the bulk sugar bin was broken. Provide for this scoop to be replaced.
- Observed that an ice scoop used to dispense ice to customers was in unsanitary condition. Provide for this scoop to be washed, rinsed, and sanitized more frequently.
