Paul Martin's American Bistro believes in supporting local vendors and farmers, resulting is the freshest ingredients possible. Our chefs create dishes seasonally to insure our guests only the best. Our mantra of "eat organic, believe in sustainable, buy local, love fresh" is what we aim to deliver, all year long.
Restauranteurs, Brian Bennett and Paul Fleming, spent more than a year finding the right vendors, producers and farmers for the restaurant. They wanted to take guests back to the farm, with meat raised humanely, organic produce, wild and farmed fish, artisan cheeses, cured meats and the freshest of baked goods (if not baked in our own ovens). All of this from local purveyors.
Some of the menu items are Mesquite Grilled Skirt Steak, Grilled Mahi Mahi with roasted pineapple salsa, Grilled Lamb with heiloom tomato and white bean salad. We also serve Sunday Brunch - with mouthwatering dishes - French Toast with vanilla bean cream and maple and bourbon syrup, Eggs Benedict.
The idea of organic and local is carried on to the bar, where over 80 bottles of wine mostly from California are on the menu, seasonal fruit infused vodkas made in house, and local craft beers.
