| Mug cooler is broken. Only mugs are stored in this cooler. It is unclear if the lights in the shed are shielded. Make sure these lights have shielded or coated bulbs. Per Carey Panier, Assistant Director, has approved the use of shelving in lieu of drain boards at the back three compartment sink. Also, she has approved the mugs not being air dried, but instead being placed directly in the chiller water. The three compartment sink is very small. If all equipment that must be cleaned in the three compartment sink does not fit in the compartments to be cleaned, a larger three compartment sink must be installed. Payment in the amount of $250.00 has been received. Check #862. A variance request has been received at the time of this inspection for the use of a popcorn machine outside with a temporary handsink. Single use items such as popcorn bags can not be reused. Final approval has been granted to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.
