1) Doughnut mix found unlabeled. Label. - In-use food dispensing utensils properly stored.
Scoop handle in doughnut dough mix was found to be in contact with product. Dispensing utensils shall be stored on a clean surface or in the product with the utensil's handle extended out of the product.
- Critical: Sanitizing concentration
1) Sanitizer solution in three compartment sink was found to be under 10ppm. -Corrected by remixing to 200ppm. 2) No sanitizer solution available to employees to properly sanitize counter tops during service. Kitchenware and food-contact surfaces of equipment shall be washed, rinsed, and sanitized after each use and following any interruption of operations during which time contamination may have occurred.
- Critical: Hand washing sinks installed, located, accessible
Back room handsink was blocked by a mop bucket and snow shovel, kitchen mop sink closest to Freezer was blocked by cardboard boxes, and hand sink by pizza oven had portion cups in the sink. -Corrected by moving items to allow for access to hand sinks. Lavatories shall be accessible to employees at all times.
- No Certified Manager Present
No CFSSM available at time of inspection. Manager stated she is enrolled in a class which will be held in February. A certified food service sanitation manager shall be present on the premises at all times potentially hazardous food is being handled.

Establishment has been given final approval to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.
A 2014 license is unable to be printed due to a computer error, however the establishment is approved to operate.
The manager is enrolled in a CFSSM class with Fulton County to be taken Feb. 3 and 10, 2015.
