  • Preventing Cross-Contamination of Packaged and Unpackaged Food by Separation, Packaging & Segregation (46.281)
    --Raw meat juices observed collecting on bottom of milk cooler unit and freezer unit mentioned below. All raw meats MUST be stored in leak proof containers. All surfaces covered with meat juices need cleaned and sanitized. Staff initiated corrective actions during inspection.
  • Food Preparation Protected (46.323)
    --Meat slicer stand sitting out not protected from overhead contamination. A plastic cover provided, staff stated that they move the slicer under the tent to use it.
  • Thawing Potentially Hazardous Food (46.383)
    --Steak and other PHFs observed thawing in white chest freezer in an unplugged chest freezer, which is not an approved thawing method. PIC and staff moved the PHF products to another refrigerated cooler on site for thawing. REPEAT VIOLATION: this matter was thoroughly discussed and subsequently corrected at last year's event.
  • Frequency of Cleaning Cooking & Baking Equipment & Microwave Ovens (46.713)
    --Two roaster units not cleaned after previous day's use, congealed grease build up in roasters.
