I primarily want it to prevent my children from accessing it. I prefer something without a key and with no electronics so I don’t have to worry about a battery dying. Is a safe with a simplex lock like Fort Knox my only real option?

Simplex fits the bill of without a key and with no electronics. Alternatives would be dial locks; a four digit dial would have 10x as many possible combinations as Fort Knox Simplex lock, but is easier to manipulate to try them all.
Another option would be ShotLock's "Solo-Vault", which has a lock similar to, but different from, Simplex:
Those lock boxes will keep most kids out but they are no deterrent to anyone wanting to steal your guns.

I wouldn't expect any thief who saw the lockbox to spend any time on the scene trying to open it. He'd shake it to make sure something was inside and just steal the box to open it at his leisure.

My point is that if thieves can open them easily, so can "children".
When kids are around, I have my guns either in a safe or within arms reach.
Just get a safe if you have more than one piece. Most gun owners also have rifles.
