I never really noticed, often I'll buy a cheddar only offered in one color. My favorites are the aged whites that develop tiny little salt crystals in them with age I assume other than color you're talking about from the same maker, of the same age, etc. ?
I've wondered that too. Even with American cheese, yellow/orange is cheaper. There is some idea among many that the white versions are superior (cheese racism maybe?) My sister, for example will not eat orange cheese, and when we took her kids out to a restaurant known for its grilled cheese, her kids whined when they got orange cheese and had to send it back to get white cheese. So she passed this idea on to them. If it's some kind of "snob factor" I guess they charge more for white cheese because people will pay it.
I bought a piece of the worst Vermont cheddar I've ever eaten last week. It was on sale for $8.99, so I was expecting a little excellence, but in a blind taste test, I doubt I'd've been able to distinguish it from American cheese.
