All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. OBSERVED FOOD DEBRIS/DUST BUILD UP SHELVES AT PREP AREAS AND FOOD ACCUMATED ON LOWER SIDE OF SHELVES/TABLE TOPS. MUST CLEAN AND MAINTAIN ALL UNCLEAN EQUIPMENT.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST PROVIDE AND INSTALL LIGHT COVERS THROUGHOUT 3RD FLOOR PREP/DISHMACHINE AREA.

FAUCET WASHERS OF 3-COMP. SINK & HANDSINK (COFFEE STATION) AT MAIN KITCHEN MUST BE FIXED-LEAKING & LOW WATER PRESSURE).
