All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE INTERIOR AND EXTERIOR OF THE DEEP FRYERS, INTERIOR OF CHEST FREEZER IN THE BASEMENT, AND INTERIOR OF THE ICE MACHINE.
The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN THE WALLS OF THE PREP AREA.
OBSERVED DRAIN LINE WATER LEAK AT RIGHT COMPARTMENT OF THE 3 COMPARTMENT SINK IN THE PREP AREA.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. NO THERMOMETER OBSERVED INSIDE OF THE REACH-IN PREP COOLER. MUST PROVIDE.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. OBSERVED LITTER ON THE GROUND AROUND THE GARBAGE DUMPSTER. MUST KEEP AREA CLEAN.

CHEMICAL DISH MACHINE NOT DISPENSING CHLORINE SANITIZER WHILE DISHES WERE BEING WASHED. FOUND 0PPM CHLORINE AFTER SEVERAL ATTEMPTS. ALSO NOTED EXTREME DIRT, ACCUMULATED SLIME AND FOOD DEBRIS ON INTERIOR WALLS AND SURFACES OF DISH MACHINE. MACHINE TAGGED HELD FOR INSPECTION AND MUST NOT USE UNTIL REPAIRED, DISPENSES CHLORINE TO 100PP, CLEANED AND SANITIZED, C.D.P.H. CONTACTED FOR INSPECTION AND TAG REMOVAL.
