FOUND 30 FRESH, WHOLE DUCKS HANGING AT REAR PREP AREA INSIDE METAL CASE AT IMPROPER TEMPERATURE OF 51.8F. MANAGER STATES SAID PRODUCT WAS HANGING IN SAID LOCATION SINCE 02/16/10. NO TIME/TEMPERATURE LOGS PROVIDED. MANAGER/OWNER WAS NOTIFIED ON 04/28/07 AND 06/25/07 REGARDING WATER ACTIVITY ON POTENTIALLY HAZARDOUS FOODS (I.E DUCK, ROAST PORK, CHICKEN,ETC) HELD AT ROOM TEMPERATURE SHOULD HAVE A FINAL TESTING OF LESS THAN 0.85 FOR WATER ACTIVITY. MANAGER WAS INSTRUCTED TO MAINTAIN POTENTIALLY HAZARDOUS FOODS UNDER REFRIGERATION AT 40F AND BELOW FOR COLD FOODS OR HOT FOODS AT 140F AND ABOVE AT ALL TIMES. HELD FOR INSPECTION TAG PLACED ON SAID PRODUCTS. FAX LETTER TO 312-746-4240 FOR TAG REMOVAL WHEN DOCUMENTATION PROVIDED REGARDING WATER ACTIVITY.
