Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. MUST PROVIDE ICE SCOOPS FOR SERVING ICE AT BAR, AND ELSEWHERE, AS NEEDED.
All food should be properly protected from contamination during storage, preparation, display, service, and transportation. Found ready to eat food, serving ice inside ice machine not protected during storage at the time of inspection, above ice MACHINE not being maintained has build up of green,dark and brown molds substances inside,and dripping back on serving ice. Citation issued 7-38-005(a) serious,instructed to discontinue use of above ice for service,and have ice machine clean and sanitized professionally and provide service receipt. Above equipment is tagged,instructed manager to fax a letter to food protection office at 312 746 4240 to inspect and have tag removed after service.
