All dishwashing machines must be of a type that complies with all requirements of the plumbing section of the Municipal Code of Chicago and Rules and Regulation of the Board of Health. INSTRUCTED TO INSTALL 3 COMPARTMENT SINK WITH AN ATTACHED DRAINBOARD FOR PROPER WASHING, RINSING, AND SANITIZING OF MULTI-USE UTENSILS.---------MUST BE EQUIPPED WITH GREASE INTERCEPTOR OR GREASE BOX CONNECTED UNDER 3 COMPARTMENT SINK.
