A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. NO CERTIFIED FOOD MANAGER WAS PRESENT DURING THE INSPECTION WHILE POTENTIALLY HAZARDOUS FOOD (RICE AT 150F) WAS BEING PREPARED AND SERVED.
