All dish washing machines must be of a type that complies with all requirements of the plumbing section of the Municipal Code of Chicago and Rules and Regulation of the Board of Health. FOUND 3 COMPARTMENT SINK NOT PROPERLY MAINTAINED. NOTED FAUCET NECK NOT LONG ENOUGH TO REACH ALL 3 COMPARTMENT OF THE 3 COMPARTMENT SINK. INSTRUCTED TO REPLACE THE SAID FAUCET. FAUCET NECK SHOULD REACH ALL 3 COMPARTMENT FOR PROPER WASH, RINSE AND SANITIZING OF MULTI-USE UTENSIL. SERIOUS CITATION ISSUED 7-38-030.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INSTRUCTED TO CLEAN AND MAINTAIN STORAGE SHELVES/RACKS INSIDE WALK-IN COOLER.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. LIGHT MUST BE SHIELDED IN WALK-IN COOLER OR PROVIDE SHATTERPROOFED LIGHTBULB.

INSTRUCTED TO FIX SLOW DRAINING EXPOSED HAND SINK IN FOOD PREP AREA.
