All food establishments that display, prepare, or store potentially hazardous food shall have adequate refrigerated food storage facilities. The reach in milk refrigerator is holding milk at 50.3 f and the walk in cooler is holding milk at 47.8 f to 50 f. The walkin cooler was adjusted and the temperature dropped to 38 f, cooler not tagged. The reach in cooler was tagged held for inspection until repaired or replaced and inspected by the Chicago Department of Public Health. Fax a tag removal request to (312) 746-4240 when the equipment is ready for re-inspection.
All cold food shall be stored at a temperature of 40F or less. Approximately 1000 half pints of milk were found at 47.8 f to 50.3 f internal temperature. All milk on premises was tagged held for inspection until it expires on June 1, 2010 after which time the milk may be picked up and properly disposed of by the milk vendor. Approximately 62.5 gallons of milk valued at $220.00 is tagged held for inspection.
When toilet and lavatory facilities are provided for the patrons of food establishments, such facilities shall be adequate in number, convenient, accessible, properly designed, and installed according to the municipal code. Eight out of twelve of the washrooms and the sinks in rooms 105, 113, 202, 207, 213, 215, and 216 have no hot running water. Restore the hot water to all sinks in the building.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. The cafateria metal stem thermometers were ten and twenty-one degrees off, the thermometers were recalibrated at this time. Install working thermometers in the classroom refrigerators.
All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. Over 50 mouse droppings were found around the perimeters and in the cubbies of rooms 105, 111 and 113. Holes were found in the baseboards next to the attached book cases and the west dock door has 1/4' gaps at the bottom. Wash, rinse and sanitize the areas where droppings are found and rodent proof all possible gaps and outer entry points. The pest control reports need to address harborage and pest proofing issues so you can make necessary repairs.
The walls and ceilings shall be in good repair and easily cleaned. Scape and reseal the peeling paint in room 213.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Wash, rinse and sanitize the interior of the reach in milk cooler to remove bad odor and spilled milk.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. Install light shields in both of the walk-in freezers.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Seal the exposed pipe insulation in room 111 next to the sink.
All evidence of rodent activity and entry points have been addressed at this time. Concern pest control report dated 5/24/10 reviewed. CONTINUE TO MONITOR THE 100 LEVEL CLASSROOMS REGULARLY AND LOG THE FINDINGS IN THE PEST CONTROL LOG BOOK.
The water circulation pump had been turned off and all hot running water has been restored.
Scrape and reseal the peeling paint in room 213.
The reach in milk cooler is now clean and awaiting a replacement part.
The exposed pipe insulation in room 111 next to the sink was repaired.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. The shields are now intact but the lighting either is very dim or doesn't work, repair the cooler lighting.
Install working thermometers in the classroom refrigerators.
The reach-in milk cooler now holds 35 f ambient air temperature, tag removed may resume using the cooler.
