REMOVE MILK/POP CRATES OFF FLOOR IN MEAT WALK-IN COOLER FOR EASY CLEANING. REMOVE RUST DEPOSITS ON SHELVING IN MEAT WALK-IN COOLER.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. CLEAN INTERIOR AND EXTERIOR OF ALL KNIVES, KNIFE RACK, SLICERS, SAW, COOLERS, FREEZERS, PREP TABLES IN MEAT PREP AREA, DISPLAY SHELVES BEHIND FRONT COUNTER AND IN SALES AREA, ETC.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOORS NEED CLEANING INSIDE MEAT WALK-IN COOLER AND FREEZER (SPILLS, FOOD DEBRIS), ALONG WALLS AND IN ALL CORNERS IN OFFICE, BEHIND FRONT COUNTER, MEAT PREP AREA, WASHROOMS, BASEMENT, 1ST AND 2ND FLOOR STORAGE AREAS. ELEVATE ALL STOCK 6' OFF FLOOR.
The walls and ceilings shall be in good repair and easily cleaned. CLEAN ALL CEILING VENTS AND FANS IN SALES AREA.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. REPLACE MISSING LIGHT SHIELD IN MEAT PREP AREA.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. REMOVE ALL UNUSED EQUIPMENT AND UNNECESSARY ARTICLES IN BASEMENT AND STORAGE AREAS.
