The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Clean and detail the area around the upstairs grease trap.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. The can opener has a worn cutter wheel and is full of metal fileings, replace the worn cutter wheel. Wash, rinse and sanitize the ice dispenser chute to remove buildup.

Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. CLEAN ALL LIGHT SHIELDS UNDERNEATH THE HOODS HAS GREASE BUILDUP.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. CLEAN ALL THE VENTS THROUGHOUT PREMISES HAS DUST AND DIRT BUILDUP ON THEM.
