ALSO OBSERVED CHICKEN WRAPPED IN FOIL INSIDE OF A BOX OF FROZEN CORN. MANAGEMENT VOLUNTARILY DISCARDED 90# OF FOOD WORTH $350. DISCUSSED FOOD STORAGE PRACTICES WITH THE MANAGER. MANAGEMENT INSTRUCTED TO CLEAN AND SANITIZE THE INTERIOR OF ALL COOLERS, FREEZERS AND STORAGE CONTAINERS. CRITICAL VIOLATION 7-38-005A.

OBSERVED FROZEN FISH STORED OUT OF THE BAG IN THE FREEZER TOUCHING UNCLEAN AND CONTAMINATED SURFACES. OBSERVED YOGURT AND SAUCES STORED IN MILK JUGS. OBSERVED ONCOVERED SAMOSAS STORED IN THE CHEST FREEZER. OBSERVED SAUCES STORED IN CHEMICAL BUCKETS LABELED AS DISH DETERGENT. MANAGEMENT DISCARDED ALL AFFECTED FOODS. SERIOUS VIOLATION 7-38-005A.
All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. OBSERVED APPROXIMATELY 10 LIVE HOUSE FLIES INSIDE OF THE DINING AND PREP AREAS OF THE RESTAURANT. THE DOORS TO THE RESTAURANT WERE KEPT OPEN DURING THE INSPECTION AND THE GAPS IN THE SCREEN DOORS WERE LARGE ENOUGH TO ALLOW ENTRY OF THE FLIES. MANAGEMENT CLOSED THE DOORS TO THE RESTAURANT WHEN THIS WAS BROUGHT TO THEIR ATTENTION. MUST ELIMINATE OR MINIMIZE THE PEST ACTIVITY. SERIOUS VIOLATION 7-38-020.
A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. NO CERTIFIED FOOD MANAGER WAS PRESENT WITH THEIR CERTIFICATE WHILE POTENTIALLY HAZARDOUS FOODS (CHICKEN AND RICE) WERE BEING PREPARED AND SERVED.
