Floor hot prep area behind equipment, cafeteria along deep fryers and electrical room off from dishmachine area not cleaned. Instructed to detail clean.
Storage cabinets, shelves, light covers under exhaust hood, trayline housing cabinet, under steam table and deep fryer cabinets not cleaned. Instructed to detail clean and sanitize.
Cold water pressure low at 1 comp sink at cooking prep station. Instructed to increase water under city pressure. Water valve in fire pump room leaking. Instructed to repair to prevent standing water. Exposed handsink removed in prep area. Instructed to replace missing handsink.
Multi use utensils not properly stored. Instructed to invert plates and silverware to prevent contamination before use.
Evidence of live insects on premises. Observed live gnats thru-out kitchen-found approximately 34 plus on walls in hot prep area. Also, receiving dock not rodent proofed. Door has two inch gap across bottom. Instructed to remove all live insects in kitchen area and rodent proof door to prevent insect and rodent entry. Serious citation issued 7-38-020.
