All cold food shall be stored at a temperature of 40F or less. FOUND FOUR POUNDS OF RAW CHICKEN TENDERS SITTING ON REAR PREP TABLE. TEMPERATURE OF TENDERS WAS 56.4F. CERTIFIED MANAGER SAID THEY HAD BEEN OUT OF REFRIGERATION SINCE 10:00AM. INSTRUCTED MANAGER TO DENATURE PRODUCT AND DISGARD.
