REPAIR BOTTOM OF REAR EXIT DOOR, IT MUST BE TIGHT-FITTING UNDERNEATH THE BOTTOM TO PREVENT RODENT ENTRY. CLEAN OR REPLACE ALL CEILING TILES IN FOOD PREP AREA. REPAIR WALL IN REAR BY HOT WATER TANK AND REPLACE MISSING WALL TILE IN DISH WASHING AREA.
All employees shall be required to use effective hair restraints to confine hair. ALL FOOD HANDLERS(HANDLING OPEN FOOD) REGARDLESS OF TITLE ARE REQUIRED TO WEAR HAIR RESTRAINTS.
Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination.
CLEAN THE FOLLOWING: INTERIORS OF BOTH ICE MACHINES, INTERIOR CABINETS OF ALL DEEP FRYER UNITS, INTERIOR OF DEEP FREEZER IN FOOD PREP AREA.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.
