All food establishments that display, prepare, or store potentially hazardous food shall have adequate refrigerated food storage facilities. MUST PROVIDE PROPER TEMPERATURES IN ALL REFRIGERATION UNITS AND HEATING UNITS THROUGHOUT PREMISES.
The walls and ceilings shall be in good repair and easily cleaned. SEAL HOLES AND GAPS IN WALLS AND CEILING THROUGHOUT PREMISES. SEAL GAPS IN BASEBOARDS THROUGHOUT PREMISES. PROVIDE MISSING BASEBOARD BEHIND 3 COMPARTMENT SINK AND THROUGHOUT PREMISES WHERE NEEDED.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. PROVIDE LIDS FOR ALL GARBAGE CANS THROUGHOUT PREMISES.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN ALL EQUIPMENT TO REMOVE GREASE AND GRIME. CLEAN INSIDE AND OUT.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. PROVIDE MISSING LIGHT SHIELD FOR LIGHT IN HOOD VENT AND AS NEEDED THROUGHOUT PREMISES.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. PROVIDE MISSING VENT HOOD FILTERS. REPAIR SLOW DRAINING 3 COMPARMENT SINK. REMOVE DRAIN TUBE IN MOP SINK AND DRAIN PROPERLY.
None of the operations connected with food establishments shall be conducted in any room used as living or sleeping quarters. PROVIDE SELF CLOSING DEVICE ON MEN'S WASHROOM DOOR.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. PROVIDE METAL STEM AND INTERNAL COOLING UNITS THERMOMETERS.
