INSTRUCTED TO CLEAN AND MAINTAIN INTERIOR AND EXTERIOR SURFACES OF COOKING EQUIPMENT,INTERIOR OF ICE MACHINE, STORAGE RACKS INSIDE WALK-IN COOLER,AND HAND SINK CABINET UNDER HAND SINK IN WASHROOM.
All cold food shall be stored at a temperature of 40F or less. FOUND POTENTIALLY HAZARDOUS FOOD AT IMPROPER TEMPERATURE REQUIREMENT DURING STORAGE IN WALK-IN COOLER. NOTED REFRIED BEANS AT 73.2F AND COOKED RICE AT 51.2F WHICH WAS PREVIOUSLY COOKED 1 DAY BEFORE, SOUR CREAM AT 45.8F, RAW BEEF AT 51.9F. WALK-IN COOLER AIR TEMPERATURE WAS 38.4F. INSTRUCTED MANAGER POTENTIALLY HAZARDOUS FOODS MUST MAINTAIN COLD HOLDING TEMPERATURE OF 40F OR BELOW AND HOT HOLDING TEMP OF 140F OR ABOVE. MANAGEMENT DISCARDED THE SAID PRODUCTS. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. LIGHTS MUST BE SHIELDED ABOVE FRONT AND IN REAR FOOD PREP AREA.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. INSTRUCTED TO PROVIDE THERMOMETER VISIBLE INSIDE ALL COOLERS AND FREEZER.

Floor behind equipment and along wallbase not cleaned. Instructed to detail clean daily.
Rear exhaust hood, sinks, storage racks and cutting boards not cleaned. Instructed to detail clean and sanitize daily.
Faucet not maintained at three compartment sink. Instructed to replace or repair faucet.
Facilities not maintaining proper temperature. Found front prep cooler at 59.9 F while storing potentially hazardous foods. Instructed that all coolers must maintain 40 F or below. Critical citation issued 7-38-005(A). 'Held for Inspection' tag placed on cooler.
Potentially hazardous foods does not meet temperature requirement during storage, preparation, display and service. Found Guacamole-3 lbs at 50.8 F, Sour Cream-5lbs at 46.1 F and beef 10 lbs at 49.1 F in cooler stated above. Instructed that potentially hazardous food must maintain 40 F or below. Critical citation issued 7-38-005(A). Value $100, 18 lbs. Manager voluntarily denatured and discarded.
