All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. ALL OPEN WINDOWS IN BOTH LUNCH ROOMS MUST BE SCREENED.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. UNUSED WHITE BOX FREEZER MUST BE OPERATING AT ADEQUATE TEMPERATURE OR REMOVED FROM PREMISES.

The walls and ceilings shall be in good repair and easily cleaned. HOLE IN WALL BEHIND HOT HOLDING BOX UNIT ON SERVICE LINE. WALL BASEBOARD COVING BROKEN/TORN AT WALK-IN COOLER. MUST REPAIR ALL.
Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. HIGH TEMPERATURE DISH MACHINE NOT PROPERLY SANITIZING AT 180F. GAUGE RINSE READING OF 140F, GAUGE WASH READING OF 120F. AND NEITHER GAUGE MOVING. NO DISHES BEING WASHED AT THIS TIME. MANAGEMENT STATES DISH MACHINE IS NOT USED. MACHINE TAGGED HELD FOR INSPECTION AND MUST NOT USE UNTIL ALL GAUGES OPERATE PROPERLY, AND FINAL RINSE REACHES 180F OR HIGHER. C.D.P.H. CONTACTED FOR INSPECTION AND TAG REMOVAL. NO CITATION ISSUED.

NO HAND SOAP WAS PROVIDED IN THE 2ND FLOOR MEN'S AND WOMEN'S STUDENT WASHROOMS. MANAGEMENT PROVIDED HANDSOAP AT MY REQUEST. MUST MAINTAIN WASHROOMS WITH A SUPPLY OF HANDSOAP AND PAPER TOWELS OR HAND DRYING DEVICE TO DRY HANDS. SERIOUS VIOLATION 7-38-030.
