All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST SEAL RAW WOOD SHELVES THRU-OUT PREMISES.
All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN-SANITIZE; DISPLAY SHELVES THRU-OUT PREMISES, CABINET UNDER 2PART SINK, TABLE AT FRONT SERVING AREA, AND 2PART SINK.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. EXCESSIVE DEBRIS THRU-OUT, MUST CLEAN FLOORS, UNDER, BEHIND EQUIPMENT, AT CORNERS, AND ALONG WALLS. ALSO MUST SEAL OPENINGS ON BASEMENT FLOOR TO PREVENT PEST ENTRY, AND CLEAN BASEMENT FLOOR.
The walls and ceilings shall be in good repair and easily cleaned. MUST SEAL OPENINGS ON WALL IN WASHROOM TO PREVENT PEST ENTRY.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. MUST PROVIDE ADEQUATE LIGHTING FOR PREP AREA.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. MUST REPAIR PIPES UNDER WASHROOM HAND BOWL.

OBSERVED MORE THAN 25 DRAIN FLIES IN REAR PREP AREA AND INSIDE DESSERT DISPLAY CASE AND THROUGHOUT PREMISES, MORE THAN 40 RODENT DROPPINGS IN BETWEEN POP STORAGE CRATES, UNDER VANITY AT HANDSINK, IN BASEMENT ALONG THE WALL, AND ALSO NOTED OPEN BAIT AT CRAWL SPACE IN BASEMENT. FRONT DOOR NOT RODENT PROOFED. MUST REMOVE DROPPINGS, CLEAN AND SANITZE AFFECTED AREAS. MUST RODENT PROOF FRONT DOOR AND SEAL OPENINGS AROUND PIPES. RECOMMEND PEST CONTROL SERVICE ON OR AFTER 10-27-11. SERIOUS 7-38-020 CITATION ISSUED.
