Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN IN DETAIL THE FLOOR ALONG THE WALL BASE AND ALL CORNER IN THE PREP AREA, INSIDE THE ELECTRICAL ROOM, UNDER THE CART WITH THE MEAT CUTTER, AND MAINTAIN.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. MISSING LIGHT SHIELD ON THE LIGHT BULB IN THE PREP AREA, MUST PROVIDE LIGHT SHIELD .
All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN IN DETAIL THE BOTTOM SHELVE OF THE PREP TABLE AND MAINTAIN AND REMOVE THE CARDBOARD BEING USED AS A LINER. NEED TO CLEAN ALL THE LID AND EXTERIOR OF ALL THE BULK CONTAINER WITH FLOUR, RICE, SUGAR,STARCH,ETC AND MAINTAIN. AND MUST CLEAN IN DETAIL ALL THE LIGHT SHIELD OF THE BULB BY THE HOOD.
