Instructed on proper storage of wet mops (head of mop stored upright) to help eliminate fruit fly activity.
Inspector Comments: Inspector Comments: Must clean and maintain the following: ice dispensers at both soda machines to remove mold build up. Interiors of hot holding units (shelves, racks, etc).
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Must clean and maintain the following equipment: remove grease under hot holding equipment at prep station, interior of fryers (bottom cabinets), prep tables, exterior of cooking equipment
Clean all floor drains daily. Clean floors under, around and behind all kitchen equipment to remove food crumbs, grease and dirt. Floor tile at bottom of one utility sink in poor repair; repair/replace.
The walls and ceilings shall be in good repair and easily cleaned. Repair wall panel outside of walkin cooler where ants observed. Also by utility sink where in poor repair. Clean all ceiling vents and light shields to remove dust observed. Reattach loose vent in womens washroom ceiling. Remove dust from vents over convection oven.
