WORN-OUT/MISSING CAULKING AROUND THE HANDSINK AT REAR KITCHEN & AROUND THE COUNTERTOP WHERE THIS SINK IS LOCATED MUST BE REPLACED, SO THAT WATER DOES NOT SEEP THRU. All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.
FOLLOWING NEED CLEANING: INTERIOR FLOORS OF SMALL COLERS AT BAR & COFFEE STATION, DRAINS AT BOTH 3-COMP SINKS, FAN GUARDS OF MOST COOLERS, EXTERIOR ATTACHMENTS TO THE DISHMACHINE, CABINETS AT COFFEE STATION-DUE TO DUST/FOOD STAINS. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.
MISSING FLOOR TILES, POOR FLOOR GROUTING AT DISHMACHINE, KITCHEN 3-COMP SINK & COOK'S LINE MUST BE ADDRESSED. FLOORS AROUND CORNERS, BEHIND HEAVY EQUIPMENT IN BAR & KITCHEN/DISHROOM AREAS MUST BE FREE OF DEBRIS/CLUTTER/DIRT. FLOOR DRAINS THRU-OUT NEED CLEANING ALSO. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.
SOME INSULATION BY THE ICE MACHINE/SODA STATION MUST BE REPLACED (WORN-OUT). WALLS UNDER DISHMACHINE & AROUND BAR SINKS MUST BE KEPT CLEAN. SMALL DRY WALL SECTION UNDER KITCHEN HANDSINK MUST BE FIXED. WATER-STAINED CEILING TILES IN STORAGE ROOM BEHIND BAR MUST BE REPLACED. The walls and ceilings shall be in good repair and easily cleaned.
ANY CLUTTER/UNUSED EQUIPMENT/UNNECESSARY ARTICLES IN STORAGE ROOM BEHIND BAR OR IN CABINETS, MUST BE REMOVED, ELEVATED OFF THE FLOOR & IF NEEDED, MUST BE CLEANED & COVERED. ANY MILK CRATES USED FOR DRY/COLD STORAGE RACKS MUST BE REPLACED WITH REGULAR SHELVES. All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors.
