All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. FOLLOWING IN NEED OF DETAIL CLEANING AND MAINTAINING: INTERIOR AND EXTERIOR SURFACES OF 3 RICE COOKER, EXTERIOR SURFACE OF SPICE/CONDIMENT PLASTIC CONTAINERS, STORAGE RACKS WITH GREASE AND MOLD LIKE BUILD-UP INSIDE WALK-IN COOLER, EXTERIOR SURFACES OF COOKING EQUIPMENT, AND ABOVE SHELVES OF STEAM TABLE WITH DRIED FOOD SPILLS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED TO CLEAN FLOORS UNDER COOKING EQUIPMENT (WOK) WITH HEAVY DRIED FOOD DEBRIS ACCUMULATION.
The walls and ceilings shall be in good repair and easily cleaned. INSTRUCTED TO SEAL GAP/OPENING BETWEEN WALL AND FLOOR NEXT TO EXPOSED HAND SINK.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. INSTRUCTED TO PROVIDE 3 WORKING DRAIN STOPPERS FOR 3 COMPARTMENT SINK.
Dish washing facilities not maintained or operated. While draining water in middle of three compartment sink, clear water coming up from air gap. Instructed to detail clean drainline and grease box to prevent inadequate disposal of water. Serious citation issued 7-38-030.
