All dishwashing machines must be of a type that complies with all requirements of the plumbing section of the Municipal Code of Chicago and Rules and Regulation of the Board of Health. Must provide a minimum of a metal three (3) compartment sink, equipped with an attached metal drainboard, a grease interceptor and running hot and cold water under city pressure. Sinks shall be of sufficient size to permit complete immersion of the utensils to be washed and sanitized therein.
