All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INSTRUCTED TO CLEAN AND MAINTAIN INTERIOR SURFACES OF ICE MACHINE AND EXTERIOR SURFACES OF GREASE CONTAINER WITH SOME GREASE BUILD-UP IN REAR OUTSIDE AREA.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED TO CLEAN FLOORS IN REAR AREA ALONG WALLS AND IN ALL CORNERS.

Instructed that coolers must maintain 40 F or below. Critical citation issued 7-38-005(A). 'Held for Inspection' tag placed on cooler.
Potentially hazarodus foods does not meet temperature requirement during storage, preparation, display and service. Found dairy creamers-128oz on all the dining room tables, that states on packaged must be refrigerated at 69.9 F. Also, found potentially hazardous foods inside prep cooler stated above, found Ham at 45.7 F approximately 15 lbs and Ground Sausage at 47.0 F approximately 5 lbs and Ssusage patties at 46.9 F approximately 3 lbs. Instructed manager that potentially hazardous foods must maintain 40 F or below. Critical citation issued 7-38-005(A). Manager voluntarily discarded and denatured. Value $50
