FACILITY NOT MAINTAINING PROPER TEMPERATURE, FRONT COOKING AREA PREP REACH IN COOLER FOUND AT 50.7F. INADEQUATE FOOD PROTECTION. MUST REPAIR ABOVE COOLER AND KEEP AT 40F OR BELOW. TAG HELD FOR INSPECTION PLACED ON UNIT. WHEN REPAIRED TO FAX LETTER REQUESTING TAG REMOVAL. CITATION ISSUED 7-38-005[A] CRITICAL.
