All food establishments shall be provided with an adequate supply of hot and cold water under pressure properly connected to the city water supply. NO HOT WATER PROVIDED TO THE ESTABLISHMENT. HOT WATER AT THE 3 COMPARTMENT SINK WAS AT 75F. INSTRUCTED MANAGEMENT THAT HOT WATER ABOVE 110F MUST BE PROVIDED ON PREMISES AT ALL TIMES. CRITICAL VIOLATION 7-38-030.
All food should be properly protected from contamination during storage, preparation, display, service, and transportation. OBSERVED TONGS USED TO TAKE FOOD OFF OF THE GRILL TOUCHING THE GARBAGE CONTAINER NEXT TO THE FRONT REGISTER. MANAGEMENT WAS INSTRUCTED TO WASH, RINSE AND SANITIZE THE TONGS BEFORE USE. SERIOUS VIOLATION 7-38-005A.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE VENTILATION HOOD FILTERS AND HOOD AREA AND INTERIOR OF THE ICE MACHINE, LIGHT SHIELDS IN 1ST FLOOR DINING ROOM AND BASEMENT PREP AREA, VENTILATION FILTER IN THE WASHROOM.

THE 2 COMPARTMENT SINK IN THE BASEMENT IS IMPROPERLY DRAINING WITH BACKUP IN ONE OF THE SINKS WHEN WATER IS FILLED AND RELEASED IN THE OTHER COMPARTMENT. MUST REPAIR SO THAT SINK DRAINS PROPERLY.
