(7-38-020) EVIDENCE OF PEST ACTIVITY ON PREMISES. NOTED 18-SMALL/FRUIT ON WALLS ABOVE THE GREASE TRAP AREA IN DISHROOM;11-ON BOXES STORED ABOVE PREP TABLE IN REAR; 5-ON WALLS OF A SMALL OFFICE SPACE (ACROSS ICE MACHINES). INSTRUCTED TO ELIMINATE SOURCE & CLEAN/SANITIZE ALL AFFECTED AREAS. All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines.
INTERNAL THERMOMETERS NEEDED IN MOST COOLERS-MUST PROVIDE. All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units.
FLOORS THRU-OUT THE DISHROOM AREA & HALLWAY TO THE REAR DOOR MUST BE KEPT DRY AT ALL TIMES; FLOOR DRAINS THRU-OUT, ESPECIALLY UNDER SODA MACHINE MUST BE KEPT CLEAN. The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair.
ALL BULK FOOD CONTAINERS MUST BE LABELED. All food not stored in the original container shall be stored in properly labeled containers.
