Wash, rinse and sanitize the ice machine interior and chute.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. Use a sanitary drying rack to store clean dishes, not stacked in the sink.
The walls and ceilings shall be in good repair and easily cleaned. Repair or replace the damaged ceiling tiles in the basement prep/dishwashinng area. Repair the holes in the rear basement walls to prevent possible rodent entry.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. Remove moldy clothing piled under the basement stairs.
All employees shall be required to use effective hair restraints to confine hair.

MUST ALSO CLEAN SODA MACHINE DISPENSERS TO REMOVE DRY SYRUP. MUST DETAIL CLEAN INTERIOR OF BOTTOM SHELF OF THE UPRIGHT REFRIGERATOR IN BASEMENT TO REMOVE EXCESS FOOD DEBRI AND GRIME.
