All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. THE HOOD AND FILTERS IN THE PREP AREA AND FRONT LINE GRILL AERA NOT CLEAN. INSTRUCTED TO CLEAN.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. THE FLOOR IN THE FOOD STORAGE ROOM NOT CLEAN UNDER THE SHELVES AND ALONG THE WALLS AND IN THE CORNERS. INSTD. TO CLEAN.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. VENTILATION IN THE BOYS TOILET ROOM SECOND FLOOR NOT WORKING. INSTD. TO REPAIR OR REPLACE.

The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. The walls and ceilings shall be in good repair and easily cleaned. OBSERVED SEVERAL CEILING TILES IN REAR LUNCH ROOM DINING AREA AND IN FOOD LAB #127 NEED TO REPLACE AND CLEAN TILES IN FOOD LAB ROOM 127 & VENTS.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities.CLEAN LIGHT SHIELDS IN FOOD STORAGE AREA CLEAN DUSTY LIGHT SHIELDS ABOVE 2 COMP. SINK IN KITCHEN. ALSO CLEAN FOOD LAB ROOM 127 LIGHT SHIELDS.
