All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. OBSERVED FOOD BUILD UP ON SHELVES, LOWER SIDE OF DISHMACHINE DRAINBOARD, INTERIOR OF COOLERS. MUST CLEAN AND MAINTAIN ALL UNCLEAN EQIPMENT.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST PROVIDE THERMOMETERS FOR ALL COOLERS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. OBSERVED FOOD/DIRT BUILD UP ON FLOOR UNDER AND AROUND EQIPMENT. MUST DETAIL CLEAN FLOOR AND MAINTAIN.

MUST CLEAN FLOORS IN LIQUOR STORAGE CLOSET-REMOVE BROKEN GLASS AND DIRT.
MUST FIX AND MAINTAIN THE LEAK AT THE PIPE UNDER THE BAR 3-COMP. SINK.
MUST PROPERLY STORE ICE SCOOPS IN A CLEAN BIN WHEN NOT IN USE.
