All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Cutting boards with deep/dark grooves must be sanded/bleached or replaced to make surfaces smooth/easily cleanable.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Iterior panel of ice machine & fan guards of walk-in cooler need cleaning, due to dust or dirt.

ICE BUILD-UP ON THE BOTTOM WALL OF THE SMALL COOLER IN REAR PREP AREA, MUST BE FIXED. All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.
